who we are
Hi! My name is Ellinor Davis and I am the owner of happenstance. Spencer Coffey is next to me and allows this operation to run as smoothly as it does. He is my second brain as well as the second heart of happenstance.
I have always had the dream of opening a coffee shop (and still do). However, this whole thing started out of my college dorm room. I made little coffee TikToks each morning of what I was drinking that day. Little did I know that many people would end up seeing them. People on campus started asking me about buying my coffees out of the dorm.
Somehow, I got lucky enough to find the perfect coffee cart off Facebook Marketplace and everything from that point on fell into place for the most part. As a college student, I couldn’t fully commit to opening a brick and mortar so a cart was the perfect middle ground for me.
My favorite part of the coffee industry is the ability to connect with people that you otherwise wouldn’t cross paths with. Whether that is building a customer/employee relationship or a customer to customer relationship. In our society I find it so important to connect with people face to face instead of through screens and build long-lasting relationships. I hope that happenstance can be that place for you to connect with people through coffee and conversation.
